01 - 450 g fresh salmon, skinless, cut into bite-sized cubes
02 - 1 teaspoon garlic powder
03 - 1 teaspoon smoked paprika
04 - 0.5 teaspoon salt
05 - 0.5 teaspoon black pepper
06 - 100 g panko breadcrumbs
07 - 1 tablespoon olive oil or olive oil spray

→ Bang Bang Sauce

08 - 120 g mayonnaise
09 - 2 tablespoons sweet chili sauce
10 - 1 tablespoon sriracha (adjust to taste)
11 - 1 teaspoon honey (optional)
12 - Juice of 0.5 lime

→ Bowls

13 - 320 g cooked jasmine rice or cauliflower rice
14 - 100 g shredded purple cabbage
15 - 1 avocado, sliced
16 - 60 g shredded carrots
17 - 2 green onions, sliced
18 - Fresh cilantro, for garnish
19 - Sesame seeds, for garnish

# How to Make It:

01 - Preheat the oven to 200°C or set the air fryer to 200°C.
02 - Combine salmon cubes with garlic powder, smoked paprika, salt, and pepper in a large bowl. Toss until all pieces are thoroughly coated.
03 - Press each seasoned salmon cube into panko breadcrumbs until evenly coated. Arrange on a tray and lightly spray or brush with olive oil.
04 - For oven: Place salmon on parchment-lined baking tray and bake for 12–14 minutes or until golden and crisp. For air fryer: Cook in single layers at 200°C for 8–10 minutes, flipping halfway, until evenly crispy.
05 - Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey in a bowl until smooth and fully combined.
06 - Arrange a base of cooked rice in each bowl. Top with shredded cabbage, avocado slices, shredded carrots, and warm salmon bites. Drizzle with Bang Bang sauce and finish with green onions, cilantro, and sesame seeds.
