Preheat oven to 190°C. Slice pears in half lengthwise and carefully remove cores; trim the bottoms if needed for stability.

Position pear halves cut-side up in a baking dish and top each with a pat of unsalted butter.

Roast in the preheated oven for 20 minutes until pears are soft and golden around the edges.

As pears bake, combine cranberries and 2 tbsp honey in a small saucepan over low heat. Simmer gently until cranberries begin to burst, about 5 minutes. Set aside.

Remove pears from oven and allow to cool slightly. Spoon goat cheese into the core cavity of each pear half.

Spoon warm cranberry mixture over the goat cheese, drizzle with additional honey, and garnish with fresh mint leaves and a dash of ground cinnamon if desired. Serve warm or slightly chilled.
