Whisk the honey, cinnamon, and vanilla in a small bowl and set aside.

Preheat your oven to 175°C (350°F) and spray a baking dish with non-stick cooking spray.

Place the nectarine halves in the prepared dish, cut side up. Pour the sauce over each half, filling the center and allowing it to drip down the sides. Reserve some sauce for drizzling later if desired.

Bake for 25-30 minutes or until the nectarines are soft and the sauce is bubbling.
