Creamy gnocchi soup with crispy bacon, sharp cheddar, and tender vegetables for a warming, comforting dish.

# Ingredients List:

→ Soup Base

01 - 8–10 slices bacon, cooked until crispy and chopped
02 - 1 tablespoon unsalted butter or olive oil
03 - 1 large onion, finely diced
04 - 2 large carrots, peeled and sliced
05 - 950 ml chicken broth
06 - 450 g gnocchi
07 - 480 ml heavy cream or half-and-half
08 - 200 g shredded cheddar cheese

# How to Make It:

01 - Cook bacon slices in a skillet over medium heat until crisp. Transfer to paper towels, then chop coarsely and reserve.
02 - In a large pot, melt butter or heat olive oil over medium heat. Add diced onion and sliced carrots; sauté until softened and fragrant, about 5 minutes.
03 - Pour in chicken broth and bring to a gentle simmer, stirring occasionally to combine flavors.
04 - Reduce heat to low. Stir in heavy cream or half-and-half and gradually add shredded cheddar, allowing it to melt fully for a smooth consistency.
05 - Add gnocchi to the pot and simmer for 2 minutes, or until the gnocchi float and are tender.
06 - Stir chopped bacon into the soup. Adjust seasoning if necessary. Ladle hot soup into bowls and serve immediately.

# Extra Tips:

01 - For a lighter texture, replace heavy cream with half-and-half or use part milk. Gnocchi cooks quickly—avoid overcooking to maintain ideal texture.
