Season chicken breasts generously with salt and pepper.

Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.

In the same skillet, add sliced onions and cook for 3–4 minutes until softened.

Stir in apple slices and cook for 2–3 minutes until slightly tender.

Pour in apple cider and chicken broth, scraping up any browned bits from the bottom of the skillet.

Add thyme, return the chicken to the skillet, and simmer for 8–10 minutes until chicken is cooked through and the sauce reduces slightly.

Serve hot over mashed potatoes or rice, spooning sauce over the top.
