Autumn Harvest Chicken Skillet (Print Version)

Juicy chicken breasts with caramelized apples and onions in a rich apple cider sauce, ready in just 30 minutes.

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil or butter
03 - 1 large onion, thinly sliced
04 - 2 apples, thinly sliced (Honeycrisp or Gala)
05 - 1 cup apple cider (not vinegar)
06 - ½ cup chicken broth
07 - 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
08 - Salt and black pepper, to taste

# Steps to Follow:

01 - Season chicken breasts generously with salt and pepper.
02 - Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
03 - In the same skillet, add sliced onions and cook for 3–4 minutes until softened.
04 - Stir in apple slices and cook for 2–3 minutes until slightly tender.
05 - Pour in apple cider and chicken broth, scraping up any browned bits from the bottom of the skillet.
06 - Add thyme, return the chicken to the skillet, and simmer for 8–10 minutes until chicken is cooked through and the sauce reduces slightly.
07 - Serve hot over mashed potatoes or rice, spooning sauce over the top.
