Tomato Basil Pasta (Print Version)

A classic pasta dish with tomatoes, fresh basil and parmesan that comes together in minutes using pantry staples.

# Ingredients:

01 - 2 tablespoons olive oil
02 - 1 small yellow onion, diced
03 - 4 garlic cloves, minced
04 - Salt
05 - Pepper
06 - 1 (28-ounce) can diced tomatoes, drained
07 - 1-2 tablespoons balsamic vinegar
08 - 1/2-1 cup pasta water
09 - 16 ounces thin spaghetti or angel hair pasta
10 - 1/2 cup fresh basil, chopped
11 - 1/2 cup Parmesan cheese, grated

# Steps to Follow:

01 - Cook the pasta according to package instructions until al dente.
02 - Heat olive oil in a large pan over medium-low heat. Add diced onions, minced garlic, salt, and pepper. Cook until softened, about 5 minutes.
03 - Add drained diced tomatoes and balsamic vinegar to the pan. Cook until slightly reduced, about 5-8 minutes.
04 - Add 1/2 cup of pasta cooking water to the pan with the tomato mixture. Drain the pasta and add it to the pan along with chopped basil and grated Parmesan cheese. Toss to combine well.
05 - Taste and adjust seasoning with more salt, pepper, or basil as needed. Serve immediately.

# Additional Notes:

01 - Draining the tomatoes prevents the dish from resembling a traditional tomato sauce and creates a lighter texture. Set aside strained juice for other uses.
