Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Sear the sausage slices until browned. Remove and set aside.

In the same pan, add the remaining oil if needed. Sauté the chopped onion for 5 minutes until translucent.

Stir in the garlic and cook for 30 seconds until fragrant.

Add uncooked rice to the pan. Stir to coat and toast for 2–3 minutes until lightly golden.

Pour in the chicken broth, barbecue sauce, and soy sauce. Scrape the bottom of the pan to deglaze.

Return the sausage to the pan. Bring to a simmer, cover, and reduce the heat to low. Simmer for 18–20 minutes, stirring once halfway, until the rice is cooked.

Turn off the heat and let the dish sit covered for 5 minutes. Fluff the rice with a fork and season to taste.

Garnish with chopped green onions or parsley before serving.
