Tender sirloin and potatoes slow-cooked to perfection, topped with melted cheese and bacon for a hearty, comforting meal.

# Ingredients:

01 - 1.5 lbs sirloin steak, cut into 1-inch cubes
02 - 2.5 lbs potatoes, chopped (Yukon Gold or Russet work best)
03 - 1 medium onion, chopped
04 - 3 cloves garlic, minced
05 - 2 tablespoons olive oil
06 - 1 teaspoon smoked paprika
07 - 1 teaspoon salt
08 - ½ teaspoon black pepper
09 - 1 cup shredded cheddar cheese
10 - ½ cup mozzarella cheese
11 - 4 slices cooked bacon, crumbled (optional)
12 - 2 tablespoons fresh parsley, chopped (optional)
13 - Sour cream, for serving (optional)

# Steps to Follow:

01 - Wash and chop the potatoes into bite-sized chunks. Dice the onion, mince the garlic, and cube the sirloin steak. If using bacon, cook and crumble it ahead of time.
02 - In a large bowl, combine steak, potatoes, onion, and garlic. Drizzle with olive oil and sprinkle in paprika, salt, and black pepper. Toss everything until evenly coated.
03 - Layer the seasoned mixture into your slow cooker. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the potatoes are tender and the steak is cooked through.
04 - About 20 minutes before serving, sprinkle the cheddar and mozzarella evenly over the top. Add crumbled bacon if using. Cover again and let the cheese melt.
05 - Sprinkle with chopped parsley before serving. Optional: add a dollop of sour cream or a drizzle of ranch dressing for a true loaded-bake experience.
