# Ingredients:

01 - 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
02 - 3 cloves fresh garlic, minced
03 - 1 medium sweet onion, chopped
04 - 2 cups low-sodium chicken broth
05 - 1 cup long-grain rice
06 - 2 tbsp low-sodium soy sauce
07 - 2 tbsp extra virgin olive oil
08 - 1 cup mixed vegetables (peas and carrots)
09 - Salt, pepper, and paprika to taste

# Steps to Follow:

01 - Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, and paprika.
02 - In a large skillet over medium heat, heat olive oil. Sauté chopped onions and minced garlic until translucent.
03 - Add seasoned chicken breasts to the skillet; sear until golden brown (about 5 minutes per side).
