Slow Cooker Cowboy Casserole (Print Version)

A hearty one-pot meal combining ground beef, potatoes, beans and corn that simmers to perfection in your slow cooker.

# Ingredients:

01 - 1 pound ground beef
02 - 4 cups potatoes, chopped (Russet or Yukon Gold recommended)
03 - 1 can (15 ounces) kidney beans, drained and rinsed
04 - 1 can (15 ounces) corn, drained
05 - 1 can (15 ounces) tomato sauce
06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon smoked paprika
09 - 1 teaspoon salt, adjusted to taste
10 - ½ teaspoon black pepper
11 - 1 cup shredded cheese, optional, for topping
12 - Sour cream and chopped chives, optional, for garnish

# Steps to Follow:

01 - Heat a skillet over medium heat and cook the ground beef until browned. Drain excess fat. Chop the potatoes into bite-sized pieces for even cooking.
02 - Place the chopped potatoes at the bottom of the slow cooker. Add a layer of browned ground beef, followed by beans and corn. Pour the tomato sauce over the top and sprinkle with garlic powder, onion powder, smoked paprika, salt, and black pepper. Repeat the layers if needed to evenly distribute ingredients.
03 - Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender. In the last 30 minutes of cooking, sprinkle shredded cheese on top and let it melt.
