Slow Cooker Chicken and Broccoli (Print Version)

# Ingredients:

→ Chicken

01 - 1.5 pounds boneless skinless chicken breasts or thighs
02 - 1/2 cup low-sodium soy sauce
03 - 1/4 cup honey
04 - 1/4 cup chicken broth
05 - 2 tablespoons rice vinegar
06 - 2 tablespoons brown sugar
07 - 2 cloves garlic, minced
08 - 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger
09 - 1/4 teaspoon black pepper
10 - 2 tablespoons cornstarch mixed with 2 tablespoons water

11 - 4 cups broccoli florets, fresh or frozen
12 - 2 tablespoons sesame seeds and chopped green onions (optional, for garnish)

# Steps to Follow:

01 - Place the chicken in the slow cooker.
02 - Whisk together the soy sauce, honey, chicken broth, rice vinegar, brown sugar, garlic, ginger, and black pepper. Pour the mixture over the chicken.
03 - Cover and cook on low for 4–5 hours or on high for 2–3 hours until the chicken is tender. Shred the chicken.
04 - Mix the cornstarch with water, add it to the sauce, and return the shredded chicken to the pot.
05 - Place the broccoli on top of the chicken, cover, and cook for 20–30 minutes until the broccoli is tender.
06 - Serve the dish over cooked rice, garnished with sesame seeds and green onions if desired.
