Slow Cooker Peanut Chicken (Print Version)

Tender chicken in rich peanut sauce with Asian flavors. Just mix, set, and forget until dinner's ready.

# Ingredients:

01 - 700–900g boneless, skinless chicken thighs or breasts
02 - 1 cup unsweetened natural peanut butter (creamy)
03 - ½ cup low-sodium soy sauce
04 - ¼ cup honey or brown sugar
05 - 2–3 tbsp rice vinegar or lime juice
06 - 1 tbsp sesame oil
07 - 1 tbsp freshly grated ginger
08 - 3 garlic cloves, minced
09 - 1–2 tsp red chili flakes or Sriracha
10 - 1 cup canned coconut milk
11 - ½ cup water or chicken broth

# Steps to Follow:

01 - In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar or lime juice, sesame oil, garlic, ginger, chili flakes, and water or chicken broth. Add coconut milk if desired for additional creaminess.
02 - Place the chicken pieces at the bottom of the slow cooker. Pour the prepared sauce over the chicken, ensuring even coating.
03 - Cook on low for 5–6 hours or on high for 2.5–3.5 hours until the chicken is tender and can be easily shredded with a fork.
04 - Shred the chicken directly in the slow cooker using two forks. Stir to coat the chicken evenly with the sauce.
05 - Top the dish with crushed peanuts, chopped cilantro, green onions, or sesame seeds. Serve hot with your choice of side, such as rice or noodles.
