Meatloaf with Mashed Potatoes (Print Version)

# Ingredients:

→ Meatloaf Layer

01 - 1 lb ground beef (85/15 preferred)
02 - 1/2 cup plain breadcrumbs
03 - 1/3 cup milk
04 - 1 egg
05 - 1/4 cup ketchup
06 - 1 tsp garlic powder
07 - 1 tsp onion powder
08 - 1/2 tsp salt
09 - 1/2 tsp black pepper

→ Mashed Potato Layer

10 - 3 cups mashed potatoes (prepared or leftover)
11 - 1/4 cup sour cream
12 - 2 tbsp butter
13 - Salt and pepper, to taste

→ Topping

14 - 1 1/2 cups shredded cheddar cheese
15 - Fresh parsley (optional, for garnish)

# Steps to Follow:

01 - Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper.
02 - In a large bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
03 - Spread the meat mixture evenly in the bottom of the prepared baking dish. Bake uncovered for 20–25 minutes.
04 - Warm the mashed potatoes and stir in sour cream and butter. Season with salt and pepper.
05 - Carefully spread the mashed potatoes over the baked meatloaf layer.
06 - Sprinkle shredded cheddar evenly over the top. Bake an additional 10–15 minutes until the cheese is melted and bubbly.
07 - Let cool for 5–10 minutes. Garnish with chopped parsley if desired. Slice and enjoy.
