Lemon Herb Chicken and Rice (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken thighs
02 - 1 cup long-grain rice
03 - 2 cups chicken broth
04 - 1 lemon, juiced and zested
05 - 4 cloves garlic, minced
06 - 1 teaspoon dried thyme
07 - 1 teaspoon dried rosemary
08 - Salt and pepper, to taste
09 - Fresh parsley, for garnish

# Steps to Follow:

01 - In the slow cooker, combine rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
02 - Place the chicken thighs on top of the rice mixture.
03 - Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender.
04 - Fluff the rice with a fork and serve the chicken over the rice, garnished with fresh parsley.
