In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, black pepper, onion powder, and lemon zest to make the marinade.

Place the chicken breasts into a resealable plastic bag or a shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 24 hours for more intense flavor.

Preheat your grill or a grill pan over medium-high heat. Lightly oil the grill grates.

Remove the chicken from the marinade and shake off any excess. Discard the remaining marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the outside is nicely charred.

Remove the chicken from the grill and let it rest for 5 minutes before slicing.

Garnish with fresh parsley before serving, if desired.
