Lemon & Garlic Greek Chicken (Print Version)

Juicy chicken infused with lemon, garlic and oregano, marinated to perfection and grilled for a tangy Mediterranean feast.

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - 1/3 cup olive oil
03 - 1/3 cup fresh lemon juice
04 - 3 cloves garlic, minced
05 - 1 tablespoon dried oregano
06 - 1 teaspoon salt
07 - 1 teaspoon black pepper
08 - 1 teaspoon onion powder
09 - Zest of 1 lemon
10 - Fresh parsley, chopped (for garnish)

# Steps to Follow:

01 - In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, black pepper, onion powder, and lemon zest to make the marinade.
02 - Place the chicken breasts into a resealable plastic bag or a shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 24 hours for more intense flavor.
03 - Preheat your grill or a grill pan over medium-high heat. Lightly oil the grill grates.
04 - Remove the chicken from the marinade and shake off any excess. Discard the remaining marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the outside is nicely charred.
05 - Remove the chicken from the grill and let it rest for 5 minutes before slicing.
06 - Garnish with fresh parsley before serving, if desired.

# Additional Notes:

01 - For best results, marinate the chicken overnight.
02 - This recipe can also be baked in the oven at 400°F (200°C) for about 25 minutes.
03 - For a complete meal, serve with a side of Greek salad or roasted vegetables.
04 - This marinade is versatile and can be used for other meats such as lamb or pork.
