Garlic Roasted Vegetables (Print Version)

Colorful vegetables roasted with garlic, herbs and olive oil until perfectly caramelized and tender for a delicious side dish.

# Ingredients:

01 - 2 cups broccoli florets
02 - 2 cups cauliflower florets
03 - 2 cups carrots, sliced
04 - 1 medium red bell pepper, chopped
05 - 1 medium yellow bell pepper, chopped
06 - 4 tablespoons olive oil
07 - 4 cloves garlic, minced
08 - Salt, to taste
09 - Pepper, to taste
10 - 1 teaspoon dried oregano
11 - 1 teaspoon dried thyme
12 - 1/4 cup fresh parsley, chopped

# Steps to Follow:

01 - Preheat your oven to 425°F (220°C).
02 - Wash the vegetables thoroughly under cold water. Chop the broccoli and cauliflower into bite-sized florets, slice the carrots into rounds, and chop the red and yellow bell peppers into pieces.
03 - In a large mixing bowl, combine all the chopped vegetables. Drizzle with olive oil and add minced garlic, salt, pepper, oregano, and thyme. Toss to coat evenly.
04 - Spread the seasoned vegetables evenly on a large baking sheet in a single layer.
05 - Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
06 - Remove from the oven and transfer to a serving dish. Garnish with fresh chopped parsley before serving.
