# Ingredients:

→ For the Steak Bites

01 - 1.5 pounds sirloin steak, cut into 1-inch cubes (substitute: ribeye or New York strip for extra richness)
02 - 3 tablespoons olive oil, divided
03 - 1 teaspoon kosher salt
04 - ½ teaspoon freshly ground black pepper
05 - 1 teaspoon garlic powder
06 - ½ teaspoon smoked paprika

→ For the Potatoes

07 - 1.5 pounds baby potatoes, halved (substitute: Yukon Gold potatoes, cubed)
08 - 2 tablespoons olive oil
09 - 1 teaspoon salt
10 - ½ teaspoon black pepper
11 - 1 teaspoon dried rosemary
12 - ½ teaspoon dried thyme

→ For the Garlic Butter

13 - 4 tablespoons unsalted butter
14 - 6 cloves garlic, minced
15 - 2 tablespoons fresh parsley, chopped
16 - 1 tablespoon fresh lemon juice
17 - ¼ teaspoon red pepper flakes (optional)

# Steps to Follow:

01 - Pat the steak cubes completely dry with paper towels to ensure proper searing. Season with salt, pepper, garlic powder, and smoked paprika, tossing to coat evenly. Allow to rest at room temperature for 10 minutes. Halve baby potatoes and season with olive oil, salt, pepper, rosemary, and thyme, mixing until well-coated.
02 - Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Place seasoned potato halves cut-side down in a single layer. Cook undisturbed for 8-10 minutes until golden-brown on the cut sides.
03 - Flip the potatoes and cook for an additional 6-8 minutes until tender when pierced with a fork. Push cooked potatoes to one side of the pan.
04 - Increase heat to high and add the remaining tablespoon of olive oil to the empty side of the pan. Add steak bites in a single layer and sear for 2-3 minutes per side for medium-rare, adjusting timing for desired doneness.
05 - Reduce heat to medium and push steak bites to one side of the pan with the potatoes. Add butter to the pan and melt completely. Stir in minced garlic and red pepper flakes (if using), cooking for 30-45 seconds until fragrant.
06 - Remove the pan from heat and stir in fresh lemon juice and parsley to the melted garlic butter. Toss steak bites and potatoes in the mixture until evenly coated.
