# Ingredients:

→ Fritter Batter

01 - 1 cup flour
02 - 1 teaspoon salt
03 - 1 teaspoon baking powder
04 - 2 tablespoons sugar
05 - 1/2 teaspoon cinnamon
06 - 2 eggs
07 - 1/3 cup milk
08 - 1 tablespoon melted butter
09 - 1 1/4 cups diced peaches (from 2 fresh peaches)

→ Coating and Frying

10 - Granulated sugar in flat-sided bowl
11 - Powdered sugar glaze
12 - Oil for frying

→ Powdered Sugar Glaze

13 - 1 cup powdered sugar
14 - Milk (enough for drizzling consistency)

# Steps to Follow:

01 - Using a whisk, combine flour, salt, sugar, cinnamon, and baking powder. Whisk in eggs, milk, and melted butter until smooth. Fold in diced peaches.
02 - Heat oil in a fryer or deep frying pan to 375°F (190°C).
03 - Using a long-handled ladle, scoop 1/4 to 1/2 cup of batter and gently place into the hot oil. Allow the batter to sink first, then rise. Fry for 2 to 3 minutes or until golden brown, depending on the fritter's size.
04 - Remove fritters from oil using long-handled tongs. Drain on paper towels or newspaper briefly.
05 - Place each fritter in granulated sugar and coat on both sides, or drizzle the tops with powdered sugar glaze according to preference.
06 - Whisk powdered sugar and milk together until smooth and at a drizzling consistency.
