Season the chicken breasts with salt, pepper, garlic powder, and paprika.

Sear the chicken in olive oil in a skillet for 2–3 minutes per side. Transfer to the slow cooker.

In the same skillet, sauté garlic until fragrant. Add chicken broth, heavy cream, Parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir and bring to a light simmer.

Pour the sauce over the chicken in the crock pot.

Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is fully cooked and tender.

Mix cornstarch and water and stir into the sauce. Cook on HIGH for another 15–20 minutes to thicken.

Garnish with fresh basil or parsley and serve hot.
