Crispy Keto Cinnamon Rolls (Print Version)

Delicious low-carb cinnamon rolls with cream cheese filling, crispy exterior and only 5g carbs per serving.

# Ingredients:

→ Filling

01 - 8 oz Cream Cheese, softened
02 - ¼ cup Erythritol or substitute with stevia or monk fruit
03 - 2 teaspoons Ground Cinnamon, adjust to taste

→ Dough

04 - 2 cups Almond Flour or substitute with coconut flour with adjustments
05 - ¼ cup Coconut Flour
06 - 1 large Egg
07 - 1 teaspoon Vanilla Extract, optional but recommended
08 - 1 teaspoon Baking Powder
09 - ¼ teaspoon Salt

# Steps to Follow:

01 - In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt until evenly combined.
02 - In another bowl, beat the softened cream cheese with the egg and vanilla extract until smooth and creamy.
03 - Gradually incorporate the dry ingredients into the cream cheese mixture, stirring until a cohesive dough forms. Let the dough rest for about 10-15 minutes.
04 - Place the dough between two sheets of parchment paper and roll it out to about ¼-inch thickness, forming a rectangle.
05 - In a small bowl, blend the ground cinnamon with a bit of erythritol to taste. Spread this mixture evenly over the rolled-out dough.
06 - Starting from one end, roll the dough up tightly; then slice it into 1-inch pieces.
07 - Heat a non-stick skillet over medium heat. Place the roll-ups cut side down and cook for 3-4 minutes on each side until golden brown and crispy.
08 - Dust the warm roll-ups with extra cinnamon and erythritol if desired, and serve immediately.
