Pour oil about 2 inches deep into an electric skillet and preheat to 375°F.

In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt. Add milk, eggs, vanilla, and oil. Mix until smooth. Fold in diced apples evenly.

Using a small or medium cookie scoop, drop spoonfuls of batter into the hot oil. Fry in small batches for about 5 minutes, flipping halfway, until golden brown.

Remove fritters with a slotted spoon and drain on paper towels. Toss them in the cinnamon sugar mixture or coat with the powdered sugar glaze while still warm.
